The January Clean

Its so weird after all the hustle and bustle of Christmas to have a quiet empty kitchen. The professional cleaners are coming in today to strip everything back and clean. Its lovely for Chef to come back to a nice clean kitchen

Its all go as the steels go in for the Garden Room extension. Paul is up the ladder taking down the pillars before the steel and acroprops go in.

Carpet cleaners are also hard at work they have done all the bedrooms and now its downstairs.

We have had lots of calls for lunch and dinner and its our turn to go out as there in nothing in the cupboards. Elsie is running around like a mad dog all excited at the activity over the break.

Some funny goings on in our Delft room. Three guests have said they have seen "Benjamin" and swore they had not been drinking. He is harmless (not armless) bless him. When we were renovating this room (see above) we found a Priest Hole at the side of the chimney breast perhaps he forgot to leave....

Black Country Night on 14th October and Halloween

We have some fantastic nights coming up. The famous black country comedian Aynuk and his friends will be delighting our guests with jokes, songs and poetry. Why not call and join us at £29.95 per head for the evening and a two course meal.

Typical Bonfire Night cold wet and windy but, it did not dampen the evening. The bonfire was the biggest around and the fireworks were great. Chef had loads of Steak Baps, Home made sausages, Chilli and Jacket potatoes with lots of different salads. Everyone enjoyed themselves. Thanks again to Max for the photo's

What a fantastic night everyone enjoyed it and singing away to the reggie songs. I think the rum punch had somthing to do with it but, the band were great and the evening went so quick. Mark did a fantastic buffet of goat curry, jerk chicken, plantain, rice and peas, sweet potato caribbean salads, even the band members said it was great food.

Where has he gone ? He has not been seen for almost a week. Someone told me they were shooting pidgeons the weekend and we are all worried about Percy. We have to admit as well that we lost another Chicken. We only let her out for an hour and she has not come back. So, it was a decision we all made that Ruby and Ethel should go to a good home. Mark, the night porter took them to a loving pen so as they can be amongst other chickens. Its a shame as we thought they would be safe with the Alpaca's but did not think they would decide to go on long walks and not come back.

Gustard, Herculese and Soldier arrived today. They walked out of the trailer and straight into the field and soon settled down. All the staff are so excited and we are all sitting with them one by one with treats. Poor Soldier is only 12 months old and his teeth are not fully formed so he had trouble with his carrot and dribbled it out all over James.

We had the Dunsley Hall Garden Party this weekend. Jamie sang and guests were dancing. The weather was great and the champagne flowed. Everyone said they wanted to come to the next one, Oh, how we wish we had the weather to be able to do it more often.

It feels like Ground Hog Day. I thought they would re-home him but obviously not. So, back in the car to a breeder in Cannock. I think he likes my driving. I have told the new owner he needs to keep him in for a while otherwise its pigeon pie on the menu

We have a new member of the team, a pigeon. We have named him Percy,poor thing landed at the Hall and decided the food smelt so nice he wouldn't leave. The trouble is, he keeps walking down to the kitchen and the Chef has treatend to (god forbid) wring his neck. So, after capturing him with the washing basket I telephoned the local vet and took him to be checked over and I thought, they may be able to find him a good home. He sat so quietly as I ferried him off to the vet. We were sorry to see him go but its for the best.

Where is a camera when you need it most. We let the Chickens out yesterday and one really loves the look of nail varnish on toes so I ended up running away from it and Alex the kitchen porter is scared of birds so he was also running around with the three girls chasing him. We then found them in the boiler room sitting in the tool box. I must admit it was the best laugh we have had for a long time.

We all really miss Stanley.Here he is hating not being the centre of attention. Lewis had just got out of the bath and Stanley used to love sitting with you whilst in the bath and then as you can see, he wanted to sit by Wilf and Lewis when we had just dried Lewis off. I found this picture in an old file, it made me smile and reminded me of his ways. So many have asked why we took him off our website, but it was hurting us too much to answer all the messages he still kept getting.

Our Granson Lewis was two in March and loves the Hall. He comes in shouting Poppa (grandad) at the top of his voice so I apologise in advance if anyone hears him. He also has a habit of pressing buttons on and off so we have to keep a careful eye on him as he knows where the fridge switches are.

We are still fighting the Kinver Fern and so far its still winning but, with determination I'm sure we will get there. They look jurassic around the gargoyles but within a day they cover them. The Alpine plants we put in last year have settled down and it's starting to look really nice. We have planted Hosta's over the newly discovered rockery until we decide on what to plant alpine wise

Tracey, the lady that breeds the Alpacas is trying to halter train them for us so, we can lead them into the different fields. The babies are beautiful they are called crias. Herculese is the Baby of the pack and Soldier is his father.

We are clearing the top field for the arrival of the Alpacas. Herculese Soldier and Gustard. Two white and one brown. We usually have sheep but, they like Eliza, are great escape artists.We have all chased sheep many a time around the gardens to the great amusement of guests when they jump the fence. Even Chef had to help last year to round them up. Alpacas are such sweet animals and apparently don't challenge fences. We will train them to walk around the Hall grounds for all to see but, it will take time and we are all so excited.

All the team have signed the photo's of the boy's to help look after them. I hope we get a few woolley jumpers this time next year.

Ethel Ruby and Gert have really settled in. Shake the tin now and they will run at you. They are still not laying cannot understand why. I have threatened them with sage and onion but its not working. They absolutely love sweetcorn and brown bread but a little squirrel keeps pinching their feed , its really cute to see them all eating together. My grandson Lewis is trying to make the sound of them clucking they just look at him in amazement

This is Stanley at the family Christmas meal

Hello everyone and welcome back to our diary. Unfortunatley, with all of today's technology and passwords its hard to remember what day it is let alone passwords when we are as busy as we have been. The diary having to be updated by me can be dangerous as I often have password block. Now the grey matter has started moving again I am pleased to say that the diary is back and the goings on at the Hall will be reported on a regular basis. I have changed the password to somthing simple.

A lot has changed since we last wrote in our diary. The plans are in lots of beautiful weddings have happened and animals are coming to the fields. I would like to thank everyone who has written and called me on the loss of Stanley and he is so missed by all and I still wait for him to come into the room which, anyone loosing a loved pet will understand. We are still hurting and at this moment in time don't want to have another cat but, maybe we will change. Anyway, I would be 77 and the cat would outlive me if he/she lived as long as Stanley. He has the brightest rose in the garden. We lost a whole bed of roses last year with the hard frost so we replaced the bed with beautiful red roses and Stanley is at the end of the bed under a rose called ice cream.

He loved to lick the bowl especially vanilla so I thought it only appropriate to put him under a rose called ice cream.

Halloween was great. We all dressed up there were cobwebs everywhere and all the staff wanted to work. The guests thoroughly enjoyed the evening. Our speaker was Graham Fisher MBE who did a presentation on THE DUNSLEY MURDER (see the story on the website) kept everyone on the edge of their seats.

There were suprises everywhere skeletons jumping out of cages hanging from the beams and singing songs which made everyone laugh. We have even been asked to take names for next year.

Its not very often we get together for a family day now we are so busy but, we decided to have a bbq. It rained of course. Lewis loved his chicken Leg and he shared it with Stanley the cat to his delight.
We often do bbq's for business meetings they have proved very popular. Oh I wish we had the weather they have in Spain. Cannot believe it from the last blog we did when it was so hot the fridges went down and we sent the meat to Dudley Zoo.

What a week for heat

So far this week we have had the dishwasher blow up, glass washer pump go and 4 fridges fail. On Thursday evening Mark loaded up the fridge for service the next day with all the meat and fish for the new menu. Low and behold when we came in it was running high with a temperature of 12 so all the meat and fish were ruined. I was distraught at the thought of throwing away all the fillet steaks, Racks of Lamb, Sirloins, Chicken, Duck and many other cuts of meat which cost well over £700 from the butchers so I telephoned the RSPCA Blue Cross and other organisations but, no one answered before 9.00am. So we decided on DUDLEY ZOO. Bless, they came along and collected all the meat (by that time the fish was thrown as you would smell it in Stourbridge) but, it made us all happy in the fact that the lions would be enjoying fillet steak that evening, but sad that we had lost so much stock.

Sorry it has been so long since we did the last newsletter, it just goes to show how busy we are. Marks menu on a lunchtime has gone so well we are advising that people book and the Garden Room is so popular for diners on a lunchtime. Its been nice proving to the bank that we are a successful business and we are 47% up on this time last year and in a recession. Its lovely seeing regular diners and staying guests and we unfortunatley have to turn people away as we are not big enough or have enough bedrooms at times, perhaps this will prove to the bank that we need to expand. The gardens are getting more established now. We have taken a lot of conifers out and found the original rockery, which, we have planted up with alpines and when we can we will plant up the other side with ferns as it was originally planned for.

We are advertising for more staff to help us in the busy periods and the response has been fantastic. We also advertised for another Chef to help in the Kitchen as once again, this is getting so busy. Lets hope he/she can bring their talents and Mark enhance them. We are looking at doing talks on the refubishment of Dunsley and Mark (Chef) to do cookery demonstrations closer to the end of the year to get us through the long and dark nights. Watch this space for dates and times.

We have teamed up with another Hotel Dunsley Hall in Whitby. When I purchased Dunsley I never knew another existed and especially a hotel but it's nice to think we can work together and give special offers at each hotel to our guests. www.dunsleyhall.com take a look at their website it looks beautiful. Mark has designed a new light lunch menu which, is going very well. He has home made beefburgers on the menu which, I have to say are beautiful.

This is a steak and balsamic onion on a twisted ciabatta one of our most popular dishes.

This wheel was found in the outhouses and we plan to use it as a feature. It originally had a handle which unfortunatley, has fallen off.

It was a hard decision. To take down all the mature shrubs and large conifers but we knew that there was more to the terrace garden that you could see. As the last owners preferred their privacy we want everyone to see Dunsley Hall for its beauty. We had a specialist tree company in to confirm that the conifers were not a rare kind seeing as I am not a Gardner and then they removed the dead ones little by little but where they had grown the ones behind were dead and they don't grown back once dead. We moved some of the shrubs around the rest of the gardens and it revealed all of the rockery.

Its beautiful and must have cost a fortune when originally designed and placed. We have approached a specialist rock garden nursery given them all of the information on the soil type the way the gardens face and from what my Dad said the acidity of the soil. My Dad is planting up and its his retirement project. It's still too dangerous for our Guests to walk down at the moment so are advising they view from afar until we have put back all the loose slabs. I am afraid the Gargoyles are also being moved, they were fine hidden in the shrubs, but, they don't really look right, so they are being put back up the Old House Tea Rooms in Kinver.

Getting the gardens ready

What a cold winter we have had, but now its time to start getting the gardens ready. Last year we really had problems with bind weed, the plant in my ignorance I though looked lovely with its white bells. The to my horror it killed all the fruit trees wrapping itself around the roots and stems. We lost all of the raspberries, gooseberries, blackberries and even had to throw away all the mint and other herbs in its path. We have grassed over the area to see if we can bring it under control. The one thing I did not want to do is use weed killer, but I don't think we have much choice. Its time we took down the large greenhouse before it falls down. Its held together with plastic and string. We will keep all of the fittings as they will come in when we start on the second phase.

We all needed a rest after the hectic Christmas we had. We closed the Hall for two weeks whilst the staff had their break but, we were busy decorating and keeping the Hall up to standard. we also had a really busy January, with 9 weddings booked and we have even been asked if we can take weddings in 2012. We had our Grandson Lewis stay with us whilst Simon and Becky went away for two days. I bathed him in the Throckmorton Bath but he kept pulling out the plug. We decided on the second night to put him in the Aromatherapy/jacuzzi bath in the Nursery on the second night he really loved the bubbles and lights. Stan the cat just kept a low profile and out of his way. We were a little concerned on how January was going to go, what with everyone tightening their belts with the credit crunch. I suppose it hasn't hit us as the bank would not lend us any money they just thought we were making a bad decision (I think I need to give them advice), but we have again been so busy. We have had 9 wedding booked this month alone with couples even asking to book for 2012.

The Hall looked beautiful with just a dusting of snow so I had to take photographs of the garden and the Hall. Well its been a very busy Christmas and who need mistletoe when everyone leaves happy and there are kisses all round.

New years eve was fantastic, with the Barry Shmidt Band I laughed that much my face ached next day and so did many of the guests. At 12am everyone danced in the New Year. I took photographs but are still trying to find them on the computer.

The hall was used for another photoshoot this week as a christmas shoot for a well known t.v. company.

The garden is still producing some of our food. Onions in abundance, there is still fennel in the the garden and we are using it for stock.

We have had a very long week everyone has enjoyed it, but, its nice sometimes to get our home back and just have five minutes sit down by the fire, unfortunately, Stan always decides he needs a lap to sit on as soon as you sit yourself down.

Who locked the guests in the Rose Room?

When we have parties someone or something comes out to join the festivities and the staff, who were all sceptical at first, see guests who are not here in body but spirit.

Alex saw someone at the bar, David and I have seen the lady on the stairs on more than one occasion and the Chef asked, "who was the gentleman sitting in the lounge?" early one morning. When we went in to see, there was no one there. The Chef ran off...

Dawn, our Housekeeper, got locked inside the Throckmorton Bedroom and had to shout to be let out. The key was on the table away from the door. And just this morning our guests, Julie and Stuart, were locked in the Rose Room. Again the key was found on the outside of the bedroom !!!!

Things are always disappearing and we have searched and searched but then they are right under our noses. I normally put this down to age but when we have all stripped the front desk down looking for an item and then put it back together again only to open the drawer and see it in there does give us the creeps.

The picture is of our Guests who came from Australia, they were such a happy couple and I said that when people are happy there are always these little globes of light about them, which, I have been told are so called "orbs". This was from their camera and when we took another photograph immediately after of no one, nothing was on it.

Stanley the halls cat was really upset the other day stood up in his chair and meowed really loud at somthing in the hall, he just looked down the hall for such a long time and would not walk along there until we went to get him.

Whoever or whatever it is, it's all part of the charm of Dunsley, but if anyone has any experiences of anything happening at Dunsley please let us know.

I am so proud of the Chef's they cooked al le carte for 72 on Friday, 80 on Saturday and to achieve this from our small kitchen is fantastic. The New fridge is in and the cold kitchen will be up and running next week.

Everyone said how beautiful the food was and all went out singing and kissing the staff.

It's Friday night and the decorations are up, David and Alex are about to start service and the fire's are roaring. We have really started to get booked up now, it's so nice seeeing everyone in their Christmas refinery, black dresses the Ladies and some Gentlemen in their dinner jackets.

Stanley (the cat) is in front of the fire, I am sure I can smell him burning, but, he has no intention of moving as its his fire and no one can get near. I hope the guests don't mind.

Channel 4

We had the privilidge of having the team from Channel 4 ITN stay with us this week. I must say they were a delight to have, they all fell for Dunsley and soon settled in to relaxing after work. It's nice to know what guests think especially when they travel all over the world reporting and staying all types of Hotels the producer wanted to move in.

It's the end of another week, we have been quite busy with business conferencing and business guests staying with us. What we love is meeting guests from all over the world in all kinds of trades, all of whom, fall in love with the ambience of Dunsley. They all seem to have gone into the Christmas mood, perhaps it's because the decorations are out and the fires are roaring.

Saturday evening was so nice with everyone enjoying the surroundings and food, we had one couple stay with us and the gentleman suprised his partner with a stay in the Throckmorton suite, champagne and a proposal. This is the second proposal that we know of, Marc and Siobhan were engaged at Dunsley and then married here on 13th September this year.

Dunsley has been in the local papers with its Solar Panels. We will know after spring how much we have saved. They work even when its cloudy, the thermostats are in my office and its nice to see them topping up. We have had people come to dine with us and discuss the solar panels as they are contemplating having them installed. I would like to know if anyone has ground source and if it has helped them, as this is the next green installment we wish to make. So, if anyone out there has this please let me know.

How quickly it has come around again. The fires are lit and the trees are going up tomorrow.

It is obligatory in the Beardsmore family to drink Bailey's and sing along to Nat King Cole. I used to drink wine, but by the third glass the fairy was always stuck in the wrong place.

We are getting very busy with Marks new menu and lots of companies are coming to stay with us. Its nice to see the men going back to their cave men ways sitting infront of the fires poking the logs putting the world to right or fast asleep.

Mark the Chef is having a walk in fridge for Christmas, and the cold kitchen is almost finished so our chocolates won't melt when full service is on, I haven't told him which chimney its coming down.

I have been told I am dangerous now I know how to BLOGG so excuse the pictures as when I put it to print they go where they like on the page. We still have spaces for the Christmas Fayre so treat yourself forget all the doom and gloom on recession, you will be suprised at our prices and visit us over the Christmas period.

It will be nice our first Christmas with Lewis I am so looking forward to seeing his little face when the Christmas trees go up. Stanley (the cat) used to try and climb them, but now he just sniffs and walks around them and waits for the turkey to be cooked. We also have two Christmas weddings so it will be nice to see Ruth and Lorretta walk through the hall in all its Christmas glory

We have a new addition to the family LEWIS he is our first Grandson, and I think he will be the last as his lungs and sleeping patterns have put a carbosh on any more siblings.

He was born on the 27th March 2008 he is a proper Beardsmore as everyone keeps telling us, and he is just like his father never slept screamed until he was four and never had any siblings.

This is Lewis with Wilf and I and with his Daddy in his red devil suit on Holloween night.

Welcome to Dunsley Hall's Newsletter. I have asked everyone here to post things that happen during the weeks ahead.

The team have worked so hard throughout the year, and are a credit to Dunsley. Together we have built a delightful place to stay work and rest. We are told by many of our guests that Dunsley is one of the best places they have been to and our feedback on the Internet sites also confirms this.
